I'm cooking a special supper tonight. Well, actually, everyone is cookign their own! We are having Cajun Fondue! That's right, I break out the Boudreaux Fondue pot (Fry Daddy), put it int he middle of the table, and set otu an assortment of goodies and everyone makes their own supper. Fondues are fun! The prep work is quite a bit, but clean-up and service is simple.
Tonight's menu includes chicken, shrimp, whole mushroom caps, parboiled baby new potatoes, summer squash, maybe a few blanched whole green beans, along with a variety of diping suaces. I usually have Sweet & Sour, a Curry-Sour Cream, some spinach dip/spread to stuff in the mushroom caps, tempura batter, and sesame seed batter. You can fry each item with or without batter, but if you stuff a mushroom, the batter holds it in! I will probably also put out some Ranch dip into which the children can dip thei rchicken and potatoes.
For dessert, I've made the Chocoalte Hazelnut Torte pictured above. I just pulled it out of the oven. I am skipping the chocoalte glaze on top, and instead stacking up fresh raspberries on top, and then will make them shiny by dabbing a little strained raspberry glaze on top of them. I htink I will sprinkle a few crushed hazelnuts on the plate when I serve it. The recipe for this ridiculously simple torte can be found here:
