Well, we can't wait for 7 PM! I've got a Chicken & Rice Casserole (recipe below) in the oven for supper, but the main feed will probably be the game time snacks! I've got Barq's on ice, Cocktail Weenies in the crockpot, Knorr Spinach Dip, Zapp's Potato Chips and a couple of dips, and some cheese and summer sausage with crackers. I couldn't find any Cream Soda up here (besides Big Red) or Crawfish tail meat with which to make a hot crawfish dip. But we'll muddle through.
I had them post a blurb on our church's website about any LSU fans who want to get together to watch the game, please email or call us. We heard from one couple today! (Our church has a weekend attendance of about 2,500, so the odds of finding an LSU fan this close to BR were pretty god.) Bob tried to connect, but only got the answering machine. So even if it's just us, we'll still have a good time. We just hope the right LSU team shows up... the ones who can spank the Buckeyes! Our neighbor down the street are Ohio State grads, and when we fly our LSU flags in the yard or on the car windows, they jokingly give us the thumbs down! LOL We just roll down the window and point at them and chant "Tiger Bait! Tiger Bait!" :-)
Creamy Chicken & Rice Casserole
2 celery ribs, chopped
1 small onion, chopped
1 Tbsp. butter or margarine
1 cup mayonnaise
1 (10.75 oz) can condensed cream of chicken soup, undiluted
1 cup frozen peas
1 tablespoon lemon juice
1 teaspoon salt
3 cups cubed cooked chicken
2 cups cooked rice
1 stack crushed Ritz crackers
Preheat oven to 350ºF. In a small skillet, saute celery and onion in butter until crisp-tender. Place in a bowl; add the mayonnaise, soup, peas, lemon juice and salt. Stir in chicken and rice. Transfer to a greased 11" x 7"x 2" baking dish. Sprinkle with cracker crumbs. Bake, uncovered for 25-30 minutes or until heated through.
Note: You can add more rice to this, but you will need more liquid to make it saucy. Add about 3/4 of a cup of chicken stock to the mix if you want to add 3 cups of rice.
